Simple sponge cake

 

My husband loves a good and simple sponge cake. Not too sweet, light and delicious. I made it my mission to create the best sponge cake. After trying many recipes I started to play with the ingredients to perfection. I believe once you mastered your sponge you can create many delicious variations.

In this post I will share with you the recipe for one layer sponge only. Everyone who tried this cake came back for another slice. It is that delicious that you don’t even need to make a cream to go with it. So let’s get started.

You’ll need:

21 cm round cake tin

Rubber spatula

Ingredients:

115g unsalted butter, softened + a little bit for the tin

80g caster sugar

2 eggs

115g self-raising flour

1 teaspoon baking powder

1 teaspoon bicarbonate of soda

1 teaspoon vanilla extract

1 tablespoon plain or vanilla yogurt

 

  

Method:

  1. Preheat your oven to 160c
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Wisk in the eggs one by one.
  4. Sift flour, baking powder and bicarbonate of soda into the mix.
  5. Add the vanilla extract and yogurt and fold the ingredients. To fold, use a rubber spatula to cut down through the mixture, move across the bottom of the bowl and come back up, folding some of the mixture from the bottom over close to the surface.
  6. Put the mixture in the oiled tin and even out the top.
  7. Bake for 20 minutes in the middle of the preheated oven until risen and golden brown on top.
  8. Take the cake out of the oven and leave it to cool in the tin and covered with a kitchen towel for 10 minutes.
  9. Take the cake out of the tin and leave it to cool for another 5 minutes.
